Dip muffins in butter, roll in sugar/cinnamon mixture and place on cookie sheet. Let set in draft-free place for 15 minutes. Bake at 350 degrees for 20 minutes until light brown. PEACHES AND CREAM ICE CREAM
Most people put ice cream on the grocery list and mom or dad just picks it up on the next run to the market, but in Millie's life it wasn't so simple. Many things were a labor of love to create. Here's a yummy recipe for homemade ice cream you and your family can make in an ice cream freezer. Now you may not have a cow to milk and get cream from, but it will still be fun to make this frozen treat and enjoy it sitting on the porch or under the tree in your yard with your friends.
Ingredients:
1 1/3 cups sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups whole milk
2 eggs, beaten
1 tablespoon vanilla
2 cups half and half
1 1/2 cups chopped fresh peaches
Directions: Combine the peaches with 1/3 cup of sugar and place in refrigerator. Combine 1 cup of sugar with cornstarch and salt. Blend the milk in slowly. Microwave on high (100%) for about 8 minutes or until thick, stirring two to three times. Whisk the hot milk mixture into the beaten eggs gradually. Microwave on high (100%) about 2-3 minutes or until thick and creamy. Chill thoroughly. Add the vanilla and half and half to the mixture. Add in the peaches, and stir. Freeze in an ice cream maker, following the manufacturer's directions. Makes about 1 1/2 to 2 quarts. Invite some friends over and enjoy this sweet treat!
BAKED APPLES IN THE MICROWAVE
What's more fun than picking apples? Loading up a basket with big beautiful crunchy apples in the fall is a great way to spend time with your family and baking them with butter, cinnamon and sugar is a delicious way to enjoy the fruits of your labor. Here's a recipe to cook up in your microwave (even though Millie would have cooked in a wood burning stove). P.S. Don't forget to share some with a neighbor.
Ingredients:
Apples
Butter or margarine
Cinnamon
Brown sugar
Directions: Simply core your apples with a coring tool and place in a microwave-safe dish. Stuff each apple hole with a little butter. Then, stuff each hole with a pinch of brown sugar and a 1/4 teaspoon of cinnamon. Cover with plastic wrap and poke a few holes, to allow steam to escape. Microwave on High (100%) for 15 to 20 minutes. Baste after 10 minutes once or twice from the sauce in the bottom of the dish. Length of time to cook depends on the number of apples to be cooked and your microwave.

DUTCH FUNNEL CAKES (Submitted by Abigail N.)
Below is a recipe I found that is really good:
3 eggs
2 cups of milk
½ cup of sugar
3 cups of flour
1/8 tsp. of salt
2 tsp. of baking powder
1 tsp. of vanilla
Directions: Beat eggs. Add milk and vanilla. Blend in rest of ingredients. Fry in ½ inch of oil in large metal pan. To drizzle, take a funnel full of dough, and pour in dough in zigzag motions. I recommend one or fewer funnels full, but do what looks right. Flip when a crispy brown on bottom side. Take out with tongs when other side is done. Put on plate with paper towels and sprinkle with powdered sugar. Eat and enjoy! Makes about 5 funnel cakes or more. Tip: only put in enough batter to just cover up grease or less.

TOGETHER TORTILLAS
2 tortillas
Shredded cheese
Lunch meat, or other fillings (like ham, pepperoni, turkey, etc. . .)
Directions: Put one tortilla on a pan, on medium heat. When it's warm, put the cheese, ham, and contents on top of the cheese. Then put another tortilla on top. Flip it over and wait until cheese is melted. Once the cheese has melted, you can't easily separate the two tortillas. The cheese is like friendship, it binds two people together. Put it on a plate and enjoy!
PEPPERONI SANDWICH
This is a very good sandwich to try. What you need is: 1 toaster oven, 8 slices of pepperoni, 2 slices of bread, 1 slice of mozzarella cheese. First, wash your hands. You put 1 pepperoni slice on the each corner of one side of the both pieces of bread. Then, you put the mozzarella cheese slice on one piece of bread. After that, put the pieces of bread together and put them in the toaster oven. Set the toaster oven dial on toast and wait until it goes off. Put it on a plate and you have a pepperoni sandwich.
